O hidromel é uma bebida fermentada à base de mel cuja produção pode ser limitada pelo baixo teor de nitrogênio assimilável pelas leveduras. Neste trabalho, avaliou-se o uso de farinha de centeio ibérico maltado como ingrediente tecnológico e bioativo na produção de hidromel.
Foram elaborados hidroméis com 1%, 2% e 5% de farinha de centeio maltado, além de um controle sem adição, utilizando Saccharomyces cerevisiae QA23™. A suplementação influenciou positivamente a cinética fermentativa, sendo o efeito mais evidente no tratamento com 5%, que apresentou maior taxa específica de crescimento celular, menor tempo de duplicação e redução do tempo de fermentação de 192 para 96 horas em comparação ao controle. Apesar da aceleração do processo, os tratamentos mantiveram teores alcoólicos semelhantes, entre 10,32 e 11,10°GL, e eficiência fermentativa entre 82,77% e 85,50%.
Além do efeito tecnológico, a farinha de centeio ibérico maltado promoveu enriquecimento bioativo da bebida. Os compostos fenólicos totais aumentaram de 5,50 mg EAG/mL no controle para 9,91 mg EAG/mL no tratamento com 5% de farinha, enquanto a capacidade antioxidante por FRAP passou de 1,46 para 1,82 mg Fe²⁺/mL.
Os resultados indicam que a farinha de centeio ibérico maltado é uma alternativa promissora para acelerar a fermentação do hidromel sem comprometer o teor alcoólico ou a eficiência fermentativa, além de aumentar a capacidade antioxidante da bebida final.
Mead is a honey-based fermented beverage whose production may be limited by the low content of yeast-assimilable nitrogen. This study evaluated the use of malted Iberian rye flour as a technological and functional ingredient in mead production. Meads were produced with 1%, 2% and 5% malted rye flour, in addition to a control without flour addition, using Saccharomyces cerevisiae QA23™. Supplementation positively influenced fermentation kinetics, with the most evident effect observed in the 5% treatment, which showed a higher specific cell growth rate, shorter doubling time and a reduction in fermentation time from 192 to 96 hours compared to the control. Despite the accelerated process, the treatments maintained similar alcohol contents, ranging from 10,32 to 11,10 °GL, and fermentative efficiency between 82,77% and 85,50%. In addition to its technological effect, malted rye flour promoted the functional enrichment of the beverage. Total phenolic compounds increased from 5,50 mg GAE/mL in the control to 9,91 mg GAE/mL in the 5% flour treatment, while antioxidant capacity determined by FRAP increased from 1,46 to 1,82 mg Fe²⁺/mL. The results indicate that malted Iberian rye is a promising alternative to accelerate mead fermentation without compromising alcohol content or fermentation yield, while also increasing the antioxidant capacity of the final beverage.
